Green Bean With Tomato--Olive Butter
Serves 12 Time: 25 Min
3 lb green beans trimmed
Tomato olive Butter:
1/2 stick 4 tbsp butter or margarine, softened
1/4 cup dalamata olives pitted and finely chopped.
1 tbsp tomato paste
1 tsp freshly grated lemon peel
1/4 tsp salt
1/8 tsp pepper
1 small tomato seeded and diced

Special Instructions
1. add beans to a large pot of boiling water and cook 4 minutes or until crisp tender. Drain in a colander, rinse under running water until cold Pat dry with a paper towel.
2. Mix tomato-olive butter ingredients in a small bowl until blended.
3. To serve; bring 1/2 cup water to boil in a large skillet or pot. Add beans and cook 4 min, or until hot and water evaporates. Remove from heat and add butter mixture and toss until melted. Transfer to serving bowl sprinkle with tomato.
Note: this receipe may be prepared thru step 2 up to 2 days ahead. Refrigerate beans in a plastic zip bag and butter mixture covered.
